West Palm Beach has welcomed an exciting new culinary destination with the grand opening of Estiatorio Milos. Legendary chef and restaurateur Costas Spiliadis introduced his iconic Greek dining experience to the city on February 7th. This marks the restaurant’s second location in Florida and its thirteenth globally. Situated in One Flagler, a prestigious office tower in the Flagler waterfront district, the restaurant brings an elevated level of sophistication to the area’s dining scene.

For over 45 years, Estiatorio Milos has been a benchmark for fine Greek dining, earning global acclaim for its dedication to fresh, seasonal ingredients. The West Palm Beach location stays true to this legacy, offering guests an authentic experience that reflects the essence of Greek culture. Every aspect of the restaurant is designed to transport diners to the Mediterranean, from its warm hospitality to its impeccable attention to detail.

Founded in Montreal in 1979, Estiatorio Milos has built a reputation for its meticulously sourced seafood, flown in daily from the Mediterranean. This commitment to quality extends to every dish, ensuring that guests enjoy flavors as fresh as those found along the Greek coastline.

Chef Costas Spiliadis is passionate about bringing Estiatorio Milos to West Palm Beach, seeing it as a natural extension of his culinary journey. He expresses excitement about joining a community that reflects the charm and elegance of his brand. For him, Milos is about more than just exceptional food—it is about fostering an environment where guests feel at home while savoring the true flavors of Greece.

A defining feature of Estiatorio Milos is its striking fish marketplace, an immersive experience that showcases an incredible variety of seafood. Guests can personally select their preferred catch from an elegant display of whole fish, shellfish, and live crustaceans, all arranged on crushed ice. A designated Captain guides diners through their choices, ensuring a highly personalized experience.

The selected seafood is then expertly prepared using methods such as grilling, baking in sea salt, or even served as sashimi, preserving its pristine quality. The menu at Milos West Palm Beach features an array of signature dishes that celebrate the simplicity and elegance of Greek cuisine. Guests can indulge in Tuna Tartare drizzled with the restaurant’s exclusive Extra Virgin Olive Oil, delicately balanced with micro basil, serrano chili, and orange segments.

The Whole Fish is prepared either grilled or baked in sea salt, offering a tender and flavorful dining experience. Another standout dish is the Milos Special, a crisp and airy combination of paper-thin zucchini and eggplant, lightly fried and served with saganaki cheese and tzatziki.

Traditional Greek spreads are a staple of the menu, including taramasalata, tzatziki, and htipiti, served with warm grilled pita and fresh vegetables. Designed by Tara Bernerd & Partners, Estiatorio Milos West Palm Beach is a visual masterpiece that blends contemporary elegance with elements inspired by Greece’s natural beauty. The restaurant features a seamless indoor-outdoor layout, allowing diners to enjoy the stunning waterfront setting. One of the highlights of the space is a dramatic staircase that serves as a reinterpretation of Milos’ signature design.

The 294-seat dining area is adorned with natural materials, including Pentelikon marble, oak planks, and textured stone, creating a warm and inviting ambiance. Custom banquettes and artwork by Evridiki Spiliadis add a personal touch to the decor.

The dynamic bar, crafted from contrasting Greek marble, provides a lively atmosphere, seamlessly extending to a landscaped terrace. This outdoor space features lush greenery, a water installation, and a view of a historic church, offering guests a serene escape.

The restaurant’s second floor offers an intimate setting with a sophisticated bar, soft lighting, and natural tones reminiscent of the Greek Islands. Every detail has been carefully curated to enhance the dining experience, immersing guests in an atmosphere that is both luxurious and welcoming.

According to designer Tara Bernerd, the goal was to create a space that captures the essence of Greek hospitality, where guests feel a sense of togetherness the moment they arrive. As part of One Flagler by Related Ross, Estiatorio Milos is positioned as the culinary centerpiece of this prestigious office tower.

One Flagler is a 25-story landmark that integrates modern design with the area’s historic charm, offering over 270,000 square feet of premium office space. The building is set to become a hub for top-tier firms in wealth management, private equity, and business innovation, making Milos a prime dining destination for professionals and visitors alike.

Kenneth A. Himmel, president of Related Ross, speaks highly of Costas Spiliadis and his ability to redefine Greek fine dining. He praises the chef’s commitment to high-quality ingredients and his talent for designing exceptional restaurant spaces.

Having previously collaborated on the Milos location at Hudson Yards, Himmel is eager to continue their partnership in West Palm Beach. He believes Estiatorio Milos will play a pivotal role in transforming the Flagler waterfront into South Florida’s premier dining district.
