Can The Police Give Us Tickets If We Get Pulled Over Again Waiting For The Next Business Day The Dmv Is Open?

So, we've been helping out my inlaws with their pets as one of them is hospitalized 2 hours away and no clue when they're coming home due to the circumstances of why they're in the hospital, well the other early morning at about 3am since we had to take the dog out at their house we were on our way back home when an officer started following us. The officer followed us for a while before pulling us over, he stated when he ran our plates their system said they were expired and that's why he pulled us over, now this was interesting to hear as our current registration was in our glove compartment and says our registration is valid until June 2025 with the plates that are on our vehicle. So the officer takes all of that information, goes back to his squad, runs our Vin Number and what do you know...it says Valid Registration until June 2025 and those are the valid plates. He comes back and says he's never seen this in his 3 years of being an officer and recommends we go to the DMV and have them try to fix it, issue is our local DMV is only open Tuesday and Thursday (it's Sunday after daylights saving so an hour ahead of where we should be). So can an officer give us a ticket for non registration of vehicle, and improper license plate display due to this situation if we get pulled over again while we wait until Tuesday?
