I Paid For A Car And It Was Repossessed.

Super condensed version, will add with more details as needed for clarification.
My now ex-girlfriend, purchased a car for me with my money from Carvana. I have tried to get my name on the title since the beginning, but I had really bad credit when the car was purchased. It was refinanced and I had been trying to get on the title but she said that it wasn't allowed. I recently found out that refinancing is one of the few ways to add someone to a title here in MN. At least I think I did the search correctly. When we were together I paid for everything for the car; tax title, registration, and all the maintenance and repairs as well. After we separated I tried several times and different ways to get receipts and documentation of all my payments and whatnot. This is because i paid cash frequently in the beginning. I have made all the payments in full and on time except one time I was a few days late. After arguing about asking for a statement saying I paid everything I was supposed to and not receiving it, today they took my car while I was working. (I do delivery through a gig app) I was withholding this month's payment until I received the statement. The payment was a day late when the car was taken. I have paid approximately 12000 dollars on the car and 4000 in various fees and expenses. Registration, maintenance, parts etc. I had offered to return the car if they return my money.
Does anyone know what I should do. I am still kinda in shock from being stranded, in MN winter 30 plus miles from my apartment. I am thinking that I need an attorney to get my money. Recommendation?
(Bonus) I just emptied my savings getting the car repaired so I don't have anything to put down on a new loan.
(Edit) I could use some mental health help right now. Any recommendations for resources?
