My Mom Wants To Write Her Own Will

My mom has cancer, and she "wants to get her affairs in order." She never made a will previously, and now she's thinking it would be a good idea. She said she's seen state specific wills online where you just fill in the blanks. I told her she should probably consult with a lawyer, but she doesn't want to if she can help it, because she is so tired and feels sick a lot, so she wants to limit the amount of time and energy she has to spend doing things. She also has a lowered immune system, so she wants to limit contact with people as much as possible.
Her will should be extremely simple and straightforward. My dad passed away many years ago, so she has no spouse or significant other. I am an only child. She has 2 brothers, but neither of them have any interest in making a claim on any part of her estate. Essentially, I get everything, and no one will contest it.
She doesn't have have a large estate. Just her house (typical size, not a mansion or anything), her car, household items (nothing of any significant value), and an undeveloped piece of property in another county that she received when my dad passed. As far as financial matters, I am on all my mom's bank accounts (listed as OR, not as AND), and I am listed as the beneficiary on all her other policies and accounts.
Would an online will work in this case? (She is aware that she will need two witnesses and have it notarized.) If so, I have a couple questions about information the will she was looking at requests. First, can I be named her personal representative and her only beneficiary? Second, how should she word it to say I get everything? And third, one part says, "I (name) resident of the City of (blank) in the County of (blank)". She lives in unincorporated St. Louis county. What would she list as her city, or would that just be left blank?

ETA: I previously made a post in another sub stating my mom was out of it mentally and couldn't really voice her opinions. It turns out she was having an extremely bad reaction to chemo. She was hospitalized, treated, her chemo was changed, and she is now of sound mind again.
